Chocolate Chia Seed Pudding

 

Okay, I have said this before and I am going to say it again, chocolate for breakfast is a brilliant, magical, and oh so very delicious idea. There is nothing wrong with listening to your cravings and giving your body what it is calling for. Sometimes I wake up and want a savory avocado toast with scrambled eggs, sometimes I want a very berry smoothie, and sometimes, I want some chocolaty creation with melted peanut butter (obviously). 

I have seen various chia seed pudding recipes, but have always held back from trying this recipe out. Why would I hold off on creating something as delicious and nutritious as chia seed pudding? Because it was different, and to be honest, it scared me. Even though it is a “healthy” meal full of fiber and omega-3 fatty acids, it was something out of my comfort zone, so I always held back. But, here is the bright side of food freedom, whether the food is labeled “healthy” “vegan” “sugary” “fat” “gluten free” or “unhealthy”, it does not matter. It is food, it fuels your body, gives you energy, leaves you satisfied, and (for me at least) brings you happiness. So, it was extremely rewarding when I realized I wasn’t “stepping out of my comfort zone” by making this chocolate chia seed pudding, I was actually just listening to my food cravings and my curiosity of what all the hype is about chia seed pudding.

After reading about how to make chia seed pudding, I realized it was actually such a simple recipe. To make a basic recipe, you need 2 ingredients: chia seeds and non-dairy milk. From there, you can pile on and add all of your favorite ingredients or toppings. Simple, nutritious, and the perfect recipe for a snack, dessert, or an on the go meal. 

I wanted to create a chocolate chia seed pudding; I wanted it to be sweet, satisfying, and maintain a thick texture. So, in addition to the chia seeds and almond milk, I added cocoa powder and honey. Mixed up the mason jar (gave it a few shakes), and bam, left it in the fridge overnight. My biggest tip is to add about 2 TBSP of water (or almond milk) the next morning to mix up the pudding. Oh, and the most important tip is to layer the mason jar with banana and add a generous scoop of peanut butter on top, and then you have secured yourself the breakfast of your dreams. 

This recipe is going to do magic for a busy schedule. Have a busy morning and have to eat breakfast on the go? Have an early work shift and don’t have time to prepare something in the morning? Relaxing after a busy day and start craving something sweet? Well, this chocolate chia pudding has your back!

Ingredients:

  • 3 TBSP chia seeds

  • ½ cup almond milk

  • 2 TBSP honey

  • 1 ½ TBSP cocoa powder


Directions:

  • Add all ingredients into a mason jar.

  • Mix and shake until well combined.

  • Leave in a fridge overnight.

  • Mix and stir in 2 TBSP of almond milk or water the next morning.

  • Top with all your favorites! (peanut butter and banana are highly suggested.)


Other Suggestions:

  • Topping: berries, banana, coconut flakes, granola, cocoa nibs, nuts.

  • Sweeteners: honey, maple syrup, agave, vanilla.

  • Additions: oats, flax seeds, steel cut oats.
