Cinnamon Sweet Potatoes

 

For the longest time, I never associated sweet potatoes with sweet foods, only savory. I honestly have no idea why, considering they are literally named “SWEET potatoes”. However, I finally made the swap this year and tried sweet potatoes in their sweetest form.

I made cinnamon sweet potatoes. And then I made them again. And then again. And then I basically had them every day. Definitely not complaining!

They take a grand total of 20-30 minutes to make, with about :30 seconds of that time to prep them. Sweet potatoes are one of the healthiest forms of carbs you can get. Full of vitamins, potassium, and fiber, they will keep you satisfied and feeling good! 

I love this recipe for various reasons: they are probably the best addition to yogurt bowls, they are perfection when dipped in peanut butter, they are crazy easy, and they are something you don’t prep ahead of time. Literally, you sprinkle cinnamon on sweet potato cubes, and then put it in the oven. Done.

I personally love this recipe in my yogurt bowls. The key is to put the yogurt in the bowl first, add any berries and extra toppings, then add the sweet potatoes while they are still warm, and finally drizzle nut butter so it gets melty and delicious! Whether as a snack or in addition to my yogurt bowls, these cinnamon sweet potatoes have been lifesavers for me. They are one of the easiest yet yummiest recipes of mine.

Ingredients:

  • 1 cup of cubed sweet potatoes (can purchase already cubed sweet potatoes from any grocery store, or cut them yourself)

  • Cinnamon

  • Honey if desired

Directions:

  • Preheat oven to 400.

  • Microwave sweet potatoes for 2:00.

  • Add cinnamon and honey.

  • Roast in oven for 20-30 minutes.

  • Let cool.
