Sweet Potato Banana Pancakes
I have always been a pancake loving gal. Whether it is my annual birthday stack or on a weekend, pancakes are one of the most warming, comforting, and favorite breakfasts’ of mine. They are a childhood favorite and a meal that holds so many little memories.
I first discovered “Banana Oat Pancakes” a couple years ago. I found them to be insanely delicious, the texture was perfect, and they had everything I needed for a post long workout refuel. These pancakes included a banana, oats, peanut butter, and eggs. I obviously jazzed it up- I added honey, cinnamon, almond flour, and a dash of almond milk. Topped it off with some extra peanut butter drizzle, chocolate chips, and fruit! Delicious! This has been a staple breakfast of mine for years. Then, I switched it up this winter and my perspective on pancakes went from delicious to a fairytale we all dream of.
I added sweet potato. Yes, you heard me, sweet potato. The night before I had sweet potato with my dinner, and left some in the fridge. After a long morning run, I was ravenous, and all I wanted were my glorious banana pancakes. I started making my usual pancakes, 1 banana, 1 egg and egg white, ¼ cup oats, 1 TBSP peanut butter, cinnamon, and a drizzle of honey. Then, I decided to spice it up and added ½ of a cold mashed sweet potato. Huge game changer.
I heated up the skillet, sprayed a little pam, and made my glorious cakes. And devoured every single bite.
If you are looking for a high protein, high carb, delicious way to fuel and start your day, these pancakes are for you. I personally love having them after a long run, because they truly have all the nutrients your body needs after a workout: carbs and protein being the main two. But, I also love having them on a Sunday morning, after sleeping in, and treating myself to some Sunday morning banana pancakes- que Jack Johnson!

Ingredients:
½ mashed sweet potato
1 egg and egg white
½ mashed banana
¼ cup oats
2 TBSP peanut butter
Dash of cinnamon
Drizzle of honey
Directions:
Mix mashed sweet potato, banana, peanut butter, eggs, and honey.
Mix in oats and cinnamon.
Place in skillet on medium heat and flip when the edges are crisp.
Add all your favorite toppings and enjoy!
